These delicious treats, made of chocolate chips, chai and ground oatmeal is a powerful trifecta of my favorite ingredients come together. It’s a really easy recipe, especially since I plucked the chai right out of the tea bags I had at home, just as the author of the recipe had done.
I’m still trying to figure out how to make my cookies chewier (I hear melting the butter works wonders), so these turned out a bit crisper than I would’ve liked, but that fragrant, spicy cardamom made up for it!
What you need:
- 1 stick butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- ½ teaspoon vanilla
- 1 cup flour
- 1-¼ cups quick cooking oatmeal
- 1 heaping teaspoon chai tea leaves
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 6 oz. chocolate chips
- ¼ cup chopped nuts (I used walnuts)
What to do:
1. Preheat oven to 375°F. Using a food processor, pulse oatmeal and chai tea together until very fine and of a powdery consistency. Set aside.

2. Cream butter and sugars. Add egg and vanilla and blend well.

3. Add flour, oatmeal/tea mixture, salt, baking powder and baking soda and blend. Then add chocolate chips and nuts. Mix just until blended.

Looks like a delicious mess
4. Shape into 1-inch balls and place 2 inches apart on a cookie sheet lined with parchment paper. Bake for 8-10 minutes. (I had to bake for a bit longer; every oven is different.)
Makes about 4 dozen cookies.

Yep! Brown sugar shouldn’t affect the taste!
