BANANA-COCONUT MUFFINS (adapted from Bon Appetit)
What you need:
- ¾ cups all purpose flour
- ¾ cups whole wheat flour
- ¼ cup oat bran
- 2 tsp baking powder
- ½ tsp salt
- 1 cup mashed ripe bananas (about 3)
- 1/3 raw organic blue agave
- ½ cup milk
- 1 large egg
- 2 tbsp olive oil
- 2 tsp fresh lemon juice
- 1 ½ handfuls shredded sweetened coconut
What to do:
1. Preheat oven to 400°F. Line 12 cupcake cups with paper liners and spray lightly with nonstick spray.
2. Combine both flours, oat bran, baking powder and salt in medium bowl; whisk to blend.
3. Place mashed bananas in large bowl. Stir in milk, agave, egg, oil and lemon juice. Mix in dry ingredients, then coconut.
4. Divide batter among muffin papers. Bake muffins until tester inserted into center comes out clean, about 20 minutes. Serve warm or at room temperature.
