Some weeknight dinner inspiration:
It’s funny how something as simple as flatbread can get me all excited. I picked up some Middle Eastern flatbread at Trader Joe’s the other day and made a pizza of sorts, topped with pesto, shredded mozzarella cheese, tofu and sauteed tomato and onions from the farmer’s market.
All it requires is a quick 10-minute pop in the oven at 350ºF and dinner is served!
