In the age of e-cards, text messages and Twitter, how often do we get something personal from a friend? Over the last year, I started mailing my friends baked goods on their birthdays, only later realizing that it’s just not the kind of thing our generation does much. Believe me, “things” are great, but I’ve happily been on the receiving end of wonderful homemade gifts, and there’s something really lovely about opening a package from a friend.

I made these wafer cookies for two of my college friends who celebrated their birthdays just a day apart. I used this recipe from Real Simple, but instead of the crushed peppermint element, I went with a colorful birthday sprinkle. Festive, no? I also used my nifty pastry roller for the textured edges.

My two regrets are 1.) not cutting the cookies into exactly the same size (that’s the Type A in me, but, hey, it was past midnight!) rolling out the dough too thin. Without a lot of workspace (can I please flash forward however many years until I have a full-on, beautiful kitchen??), I rolled it out to the best of my ability, but some turned out thinner than others, and those were the ones that became too crunchy and ultimately, more brown than golden brown.

But I’m not going to pretend like I didn’t top those with a wad of melted chocolate and eat them myself. Hey, why be wasteful?
